Day 19-Friday, January 24

Day 19!! Only 11 days left, but the only time I find myself counting down is when I'm writing on this blog. When I finish the 30 days, and go through the reintroduction period, I will still continue to eat this way. I want my whole family to do it! I'm starting to pin paleo ideas for my son, since he's kind of a picky eater right now (although he loves meat!), as most preschoolers are. 

Today I didn't have much to make for lunch. I had a meeting yesterday afternoon, and we went out for dinner last night, so I didn't even have leftovers to bring for lunch today. I sort of threw together a bunch of fruit, vegetables (okay, an avocado) and some nuts. It was actually ok, and kept me pretty full until dinner. 

Today I ate: 
Fried eggs for breakfast...kept me full until lunch. I found that I have to eat three eggs or I'm too hungry by 10am. 

Lunch: no picture. Apple, banana, cashew butter, coconut flakes. 

Dinner: meatloaf, carrots, and greenbeans with a little salt and fresh squeezed lemon. 

The meatloaf was easy and pretty tasty. I mixed 1lb of grass fed beef, 1 egg, 4 cloves minced garlic, and about 1/4 cup of almond flour. The almond flour is really only there to hold it all together. You don't taste it at all, and the texture is pretty good. I baked it in the oven at 350 degrees for an hour. I would have added some diced onion but I didn't have any.  I did miss ketchup on top, but I probably could have used some tomato paste or something without sugar. Anyway, it's easy and a good way to use ground beef. My son and husband ate it and liked it. My son actually cried when I told him we finished it all! 

Tomorrow is Saturday...hoping to get some shopping done for the week!
