I also made brownie bites using coconut, dates, cocoa, and coconut oil. They were really good, did not taste like brownies but had a lovely chocolate taste, which I have missed! I also made carmelized bananas and coconut whipped cream, which was very good.
My friends made lots of other whole 30 dishes, and we are planning to put all the recipes together, so I will post them here.
Today I didn't eat much because I knew I would be pigging out on all of the food. I had some fruit for breakfast and I did lots of tasting here and there while I was cooking, so I am super full right now. It was so fun to eat a bunch of food that was whole 30 compliant, and share it with friends. We all really enjoyed tasting different things!
Back to work tomorrow, I have some leftover quiche to enjoy!
