This is what I ate:
Breakfast: Scrambled eggs and sweet potato. My friend at work invented this, and when she was eating it yesterday it smelled delicious! I tried it this morning and it was very savory and tasty!
Dinner: lettuce taco!! This came out really good and totally satisfied my taco craving. I cooked the beef, added some spices and a little salsa (make sure you read your ingredients!) and assembled my taco using the beef, avocado, some coke slaw mix (for crunch) and mango salsa. There were so many flavors and textures it really stood out as something completely different from your standard taco. Very good!
What I learned today:
-I thought I had a taco seasoning mix at home that was whole 30 approved, but it had cane sugar in it!! The second one I had included whey. You really have to read EVERYTHING, don't assume!!
-Clementines are my new favorite thing to include in a salad
Tomorrow is Friday, then I have a three day weekend!!! Looking forward to planning some delicious meals at home. Two of my co-workers are doing the whole 30 with me, and we are planning on making some menus for next week together. I feel a little bit of boredom setting in, but I know it's just because I lack cooking creativity. Hopefully we can inspire each other!
