Day 16-Tuesday, January 21st

Today was a crazy day. We got hit with a ton of snow! I didn't take pictures of what I ate other than breakfast. I felt really good all day, I even passed on some birthday cake for a co-worker's birthday. I did have a little too much almond butter...it was freshly ground from whole foods. A friend brought me a sample so I could decide if I liked it better than the jar stuff, and it was definitely much more delicious. 

Here's what I ate today: 
Breakfast: fried eggs with sweet potato. This is my new favorite thing to eat. The combination is so delicious, I dare say that I like it better than home fries and eggs! 

Lunch: chicken soup and salad greens with avocado 

Dinner: turkey with apple slices and some cashews. I admit this was a pretty sad dinner, but my husband wasn't home and my son had been grazing all day, so neither of us were starving. 

Snack: I totally overdid it with some plaintain chips from trader joes. They were made with sunflower oil. I was starving when I got home after a really stressful, snowy, and long drive home. I ate way too many and felt really gross afterwards. Not sick, just wrong. I think a handful would have been fine, but this was a "food with no brakes" situation. It was actually a learning experience, I ate poorly and I felt bad, even though I was trying to make myself feel better. While it wasn't the worst choice, I definitely felt the difference. 

Tonorrow I'm planning some salsa chicken (easiest meal ever, dump a jar of salsa over some chicken and voila!) so I will have leftovers for work to make a fiesta salad!!!
